On the left is an American Barleywine, on the right, a Belgian Strong Dark. Both OG at 1.104. It's interesting to watch the trub settle out in the first couple hours, then the yeast bloomed in the Belgian, and starting to foam (I used 3/4gal starters for both). The Belgian Strong dark foamed over the top and sprayed the clock. I also added 1c (13oz) of Dark Candi Sugar near the end (foam goes down, then up again). At the same time I added 1lb of corn sugar to the American Barleywine. This is 48 hours of fermentation.

These two stouts were made for John Palmers NHC 2007 presentation on water pH. The one on the left was brewed with the correct water, the one on the right was brewed with the wrong water. This is about 48 hours of fermentation. Right in the middle, my wife closed the doors to the crawl space, hence the one frame with the doors shut!
